How it works
If there is no oxygen available, yeast will convert any available sugars into ethanol alcohol and carbon dioxide during the process of fermentation. In baking, the carbon dioxide causes the bread to rise and the heat evaporates the alcohol. Beer and wine makers use the ethanol alcohol for their product.
Long history
Believed to be one of the first domesticated organisms, yeasts have been used to make beer, wine and bread since ancient times.
