Reheating
To keep turkey moist when reheating, it is important to cover it with broth. The internal temperature should be brought to 165 degrees fahrenheit to kill remaining bacteria. Sauces and gravy should be heated to a boil. Leftovers can also be microwaved.CNN.com: Stuffing SafetySafety First
It is very important to not only properly store leftover food, but to do it quickly. Leaving food out longer than two hours before properly storing can create health risks due to harmful bacteria. If a food item has grown mold on it, it should be thrown away. However, just because mold is not visible does not mean harmful bacteria aren't still present. Consuming food that has been left out too long can be dangerous. When it's time to store those leftovers, make sure to divide up the items into shallow dishes. To prevent the turkey from drying out, coat each piece with a little broth. Items that will be eaten within a few days can be refrigerated, while food being saved for much later should be frozen.
