• A tart is similar to a pie, though it has no top crust, and is baked in a different pan. Tart pans are shallow with fluted sides, and are usually round, though rectangular ones are available as well. They usually have a removable bottom to aid in serving. Most pies can be turned into tarts, but tarts often have a greater emphasis on presentation. Fruit tarts usually have very little sugar, which lends itself to the name. A plum tart, for instance, can have a very sharp bite.
