Turtle soup is also known as turtle stew, snapper soup, sauce piquant or piquante (pronounced pee-kunh). The soup is made from turtle flesh, usually from the green turtle or snapping turtle. Turtle soup is a delicacy in many parts of the world and was a favorite of President William H. Taft.

In some parts of the world, turtle soup is illegal. This is due to the fact that many species of turtles are labeled as being endangered. These turtles cannot be captured or killed by penalty of the law. Turtle populations are unable to survive the loss of breeding adults.-
