Cream of Broccoli Soup Recipe

The basic ingredients of cream of broccoli soup, such as broccoli, broth and cream, are rarely changed, but the other ingredients that can be added are nearly limitless. Many choose to add other vegetables such as onions, carrots, celery or potatoes to add flavorings and texture however many other vegetables are suitable as well. Similarly, cheese is a popular addition, creating a broccoli cheese soup. Preparation methods can be varied as well, with an option to create the soup in a slow cooker.

How to Make Roasted Red Pepper Soup

  1. Line the bottom of the oven with a sheet of aluminum foil.  Preheat oven to 450 degrees Fahrenheit.  
  2. Place the whole red peppers directly on the oven racks and roast for about 40-45 minutes.  Turn them about every 15 minutes to allow them to cook evenly.
  3. Put the roasted peppers in the large mixing bowl and cover with additional aluminum foil.  Let the peppers cool.
  4. Heat the cooking oil in the large skillet over medium-high heat.  Stir in the onion, carrots, celery and garlic.
  5. Cover and allow the vegetables to sweat, but not brown, in the saucepan.  Stir occasionally and cook for about 10 minutes.
  6. Remove the peppers from the mixing bowl, reserving the liquid that has formed.  Peel the skin from the roasted red peppers and remove the seeds and stems.  
  7. Add enough boiling water to the sweating vegetables in the saucepan to cover them.
  8. Place the peeled red peppers in a blender.  Transfer the vegetables from the saucepan to the blender using the ladle or slotted spoon.
  9. Process the peppers and vegetables in the blender until smooth.  This should create a thick red mixture.
  10. Add to the blender the liquid from the roasted peppers and part of the liquid remaining in the saucepan.  Season the mixture with salt to taste.
  11. Process the mixture again, adding more liquid to create a thick soup-like texture.  
  12. Transfer to a serving bowl.  Top with creme fraiche, if desired, then serve.http://www.youtube.com/watch?v=FN0-nwII_3g
