World Vegan Day

World Vegan Day has been celebrated in Melbourne on the last Sunday of October for several years. The event is organised by a committee affiliated with Vegetarian Network Victoria, and featured stalls include Lentil as Anything, Invita Living Foods, Animals Australia, Aduki Independent Press, Eco-shout Melbourne, Vegan Society of Australia, ALV, the Melbourne University Food Co-op, and many more. The 2008 World Vegan Day festival was held on Sunday, 26 October at the Abbotsford Convent.

Low-Carb Recipes

Many commonly used recipes can be converted to low carb by using substitutes for some of the ingredients. Consider these options for lowering the carbohydrate count in recipes.

  • Turnips - Turnips are lower in carbohydrate count than potatoes. A turnip cut in strips can be fried and used as a substitute for french fries. Grated turnips can be used as a substitute for hash browns in recipes like Hash Brown Casserole.
  • Cauliflower - Steamed cauliflower can be shredded into a rice like consistency and used in place of rice in casseroles or as a base for meals typically served over rice or noodles. Cauliflower can be cooked and mashed to take the place of mashed potatoes and can be used in a potato salad recipe as a replacement for the starch.
  • Creme Cheese - Creme cheese is low in carbohydrates and can be used as a substitute for frostings on desserts.
  • Splenda - A sugar substitute of some type helps to cut the carb count in recipes. However, when baking with a sugar substitute like Spenda, the end product may not have as much height to the item as one baked with sugar. Whey protein

The use of whey proteins, as a source of amino acids and its effect on reducing the risks of diseases such as heart disease and cancer, is the focus of ongoing research. Whey is a source of branched chain amino acids (BCAAs) which are used to fuel working muscles and stimulate protein synthesis. Whey contains high amounts of BCAAs.. In particular, leucine plays a key role in initiating the transcription pathway that fires up protein synthesis. When leucine is ingested in high amount, such as with whey protein supplementation, there is greater stimulation of protein synthesis, which may speed recovery and adaptation to stress (exercise).

Whey protein contains the amino acid cysteine which can be used to make glutathione. However, this amino acid is not essential for the synthesis of glutathione and some studies have suggested that the amount of cysteine in the diet may have little effect on glutathione synthesis. However, another study suggested that large amounts of whey protein can increase cellular glutathione levels. Glutathione is an antioxidant that defends the body against free radical damage and some toxins, and studies in animals have suggested that milk proteins might reduce the risk of cancer.
