How to Cook Trout

There are a few general techniques to keep in mind while cooking trout:

  1. Do not scale the trout. If you remove the scales, you will also remove the thin coat of jelly around them, which allows you to bread the trout without using any type of liquid.c
  2. Use very mild flavored oils so as not to overpower the delicate flavor of the trout.c
  3. Trout should be cooked quickly, at a temperature between 325 and 350 degrees F.
  4. Do not overcook trout or it will become dry. The fish is done cooking when it flakes easily with a fork.c

How to Properly Cut a Salmon Filet

Using the knife, cut the salmon across the skin, across rather than against the grain.c Avoid sawing your knife back and forth; long, clean strokes are preferable. The salmon should be cut into approximately five-to-eight-ounce slices.

Chef Andrew Zimmern of the Travel Channel television show "Bizarre Foods with Andrew Zimmern" recommends cutting portions of salmon at an angle for thinner slices and faster cooking. He also recommends cutting salmon into cubes for shish-kabobs.c

How to Properly Prepare a Salmon

After buying salmon, you should bring it home and prepare it as soon as possible; this ensures freshness.

First, unwrap the salmon from its plastic or paper wrapping.

Run it under cold water to clean it well, then place it on your cutting board and pat it dry with a towel or paper towel.

If you do not intend to cook the salmon right away, refrigerate it. To store salmon, wrap it in plastic wrap and then aluminum foil. Wrapping it twice ensures that it's fully sealed to maintain freshness. Canfisco.com recommends placing two to three slices of lemon on top of the fish before wrapping and storing it.c

Place the wrapped salmon in the coldest part of your fridge, which is usually on the bottom as far back as possible. Salmon can be stored up to two days.c
