How to Make Valentine's Day Dessert: Molten Chocolate Cake
- Preheat oven to 375 degrees Fahrenheit.
- Heat the water in the large saucepan just until a simmer.
- Place the butter and chocolate chips in the metal mixing bowl. Place the bowl over the hot water in the saucepan to create a double boiler or bain-marie.
- Allow the chocolate and butter to melt. Stir occasionally using the rubber scraper.
- Prepare the cake batter by mixing the two egg yolks and sugar in the second large bowl. Mix using the wire whisk, just until blended.
- Stir in the flour and salt. Mix until just combined. Leaving flour lumps is better than over-mixing the batter.
- Remove the melted chocolate briefly until lukewarm. Gradually stir the melted chocolate into the batter mix. Mix using the wire whisk.
- Butter and sugar the ramekins. Ladle the chocolate batter into the ramekins to fill each about three-quarters full.
- Place the ramekins on a baking sheet and bake in the pre-heated oven for 10-15 minutes. Test the cakes with a toothpick. The toothpick, when inserted in the center of the cake, should come out heavily coated with the batter.
- Allow the cakes to sit in the ramekins to cool briefly. Use the offset spatula or butter knife to loosen the cakes from the ramekins.
- Invert the cakes onto serving plates and allow to sit for two-to-three minutes. Garnish each cake with creme anglaise and strawberry sauce.http://www.youtube.com/watch?v=hysIwGx4aAk

HOW TO MAKE CHURROS
Churros are traditionally topped with a cinnamon and sugar mixture. It is best to combine the cinnamon and sugar before you begin the churro making process so it is ready for use as soon as the churros are completed. While the churros are still warm, they should be rolled in the cinnamon and sugar mixture. It will stick better if they are still warm, so be ready to act quickly. You can stop adding toppings at this point if you choose to enjoy your churros the traditional way. http://www.cooking-mexican-recipes.com/churro-recipe.html http://www.enforex.com/culture/churros.html http://churrorecipe.net/
If you are feeling a bit brave and would like to try different flavors and variations with your churros, there are endless possibilities from here! A common option is to use dipping chocolate which can be used either by dunking the churro in the chocolate or drizzling the chocolate over the top of the churros. Some websites suggest dunking the churros in hot chocolate—in particular, Mexican hot chocolate, as it has a thicker consistency. http://www.cooking-mexican-recipes.com/churro-recipe.html http://www.enforex.com/culture/churros.html http://churrorecipe.net/ Other options include topping churros with fresh fruit, a scoop of ice cream, apples and caramel, or any combination of these. Get creative with the toppings you choose and enjoy your homemade treat! http://www.churros.com/recipes.html
