Tomato Sauce

A basic tomato sauce is made out of tomatoes, garlic, olive oil and salt. It is a popular part of many European, South American and Indian dishes, although it is most closely associated with Italian cuisine. The first tomato sauce was made by the Aztecs.The New York Times: Oh Sweet Poison!August 5, 1990 The idea then spread through the explorers of the New World back to Europe. The first authentic Italian tomato sauce appears in a cookbook in 1692 by Antonio Latini. He also included a Spanish tomato sauce recipe which required chili peppers.

Tips for Making Tomato Sauce

  1. Use ripe tomatoes in season
  2. Thicken a thin sauce with tomato paste
  3. Add tomato leaves at the end to intensify flavor
  4. Add butter if the sauce tastes sharp or acidic
