How to Make Cornbread Dressing
Note: Make the cornbread a day before you make your dressing. Leave it out, uncovered, overnight. Also, 10 slices of white or whole wheat bread, left out overnight.
Cornbread ingredients needed:
3 tablespoons bacon drippings, 2 large eggs, 1-1/2 cups cornmeal, 1 teaspoon salt, 1/2 teaspoon baking soda, 1 teaspoon baking powder and 1-1/4 cups buttermilk
Beat the eggs in a medium bowl, add the corn meal, ]salt, baking soda and baking powder, and mix well. Add the buttermilk and combine. Remove the heated pan from the oven. Make sure the surface of the pan is coated it with melted bacon drippings, then pour the bacon drippings into the batter and stir to mix.
Pour the batter into the pan, and bake 20 to 25 minutes.
Dressing ingredients needed:
1 9x13-inch pan of cornbread, crumbled, 10 white or whole wheat bread heels (left out overnight), 2 teaspoon poultry seasoning(or to taste), 1/2 teaspoon rubbed sage (or to taste, 1/2 teaspoon freshly ground black pepper, 3 stalks celery, chopped, 1 large onion, chopped, 3/4 cup butter, 4 cups chicken stock ( more or less), 1 cup turkey pan drippings or canned broth, and 3 large eggs, beaten
Preheat oven to 375°F. Choose a large baking pan to cook dressing in and crumble the cornbread and white bread it, you will need to stir it. Sauté the celery and onion in butter over medium heat until onion is transparent. Combine the vegetables with the bread crumbs and mix well. Add the beaten eggs, chicken stock and turkey pan drippings, and stir. (You may need a little more chicken stock it should be on the slushy side.) Add poultry seasoning, sage, black pepper, and mix well.
Bake for 15 minutes, stir dressing down from the sides of the pan so that it cooks uniformly. Cook for about 30 minutes.
Southern Dressing Recipe
Ingredients needed: 1 cup chopped green onions, 2 teaspoons chopped fresh thyme 1 teaspoon hot pepper sauce, 1 teaspoon dried rubbed sage, 1 recipe of Jiffy cornbread mix or about 12 oz of your favorite recipe of cornbread, 1 1/2 cups (about) chicken broth or a boxed type or make your own! Melt butter in heavy large skillet over medium-high heat. Add all sausages and cook until brown and cooked through, breaking up bulk sausage with back of fork, about 5 minutes. Add onions, celery and red bell peppers. Cover and cook until vegetables are tender, stirring occasionally, about 12 minutes. Stir in green onions, thyme, hot pepper sauce and sage. Transfer sausage mixture to large bowl. (Can be prepared 1 day ahead. Cover and refrigerate.) Stir stuffing mix into sausage mixture. Season with salt and pepper. Bake turkey stuffing in baking dish: Preheat oven to 350°F. Generously butter 15×10x2-inch, 13×9x2-inch or 8-inch square glass or ceramic baking dish, using size ca lled for in recipe. Add enough broth to stuffing to moisten (about 3/4 cup to 1 1/2 cups.) Transfer turkey stuffing to prepared dish. Cover with buttered foil, buttered side down; bake until heated through, about 30 minutes. ...
