Taffy is a confection made from sugar, butter, and flavorings that has a chewy texture obtained by twisting and pulling the cooked ingredients into elasticity.
Any taffy must use a process to make the product chewy. Most taffies made by individual vendors use corn syrup and butter, whereas prepackaged and mass-produced taffy uses chemical components and a speedy pulling process to stretch the candy over itself until the correct consistency is reached.

- Salt water taffy was an invention of Atlantic City, New Jersey.
- Saltwater taffy does not, to the surprise of many, contain saltwater.
- The two initial companies, James Salt Water Taffy and Fralinger’s still make saltwater taffy, and recipes have only changed slightly since their inception.
