A common misconception
Contrary to popular belief, sushi is not raw fish. Rather, sushi refers to vinegared rice topped with raw or cooked fish, seafood and vegetables. Sashimi refers to raw fish often served with sushi.
Maki zushi
The most common type of sushi served at North American sushi bars is maki zushi or sushi rolls. Rice, seaweed and various toppings are tightly rolled into a cylinder with the help of a bamboo mat. The roll is then cut into bite sized pieces.
