Sparkling wine is made through the addition of carbon dioxide to wine during the fermentation process. The bubbles in the wine are preserved by sealing the bottle to withstand the pressure created by carbonation. If a bottle is improperly sealed, it can burst or pop off the cork unexpectedly.
California Sparkling Wines
California sparkling wine production began in Sonoma County. The Korbel brothers produced the first California sparkling wines in the late 19th century and inspired several French makers of Champagne to set up wineries in California.
California sparkling wines typically combine fewer wines than Champagne and are from younger grape fermentation. Sparkling wines are, however, produced more frequently in California than some other regions, based primarily on the warm climate.
