Soy Milk

Soy milk, also known as soya milk, originated in China. It is made by soaking dried soybeans in water, grinding the beans and then straining solid particles from the mixture. Commercially available versions have added vitamins and calcium to increase nutritional value. It is often used as a substitute for dairy milk for the lactose intolerant, for people concerned about cholesterol or those who avoid dairy for ethical reasons, such as vegans. Tofu is made from soy milk.
