  • Sole is a type of flatfish. Though Pacific sole are cooked and served in many North American restaurants, the most popular and expensive species is the European Dover sole.
  • Threats to Sole

    With overfishing in Europe, the populations of sole have been declining in certain regions. According to the ICES, bottom feeding fish such as sole have been listed as outside safe biological limits in areas such as the English Channel and the Irish Sea.
