Simnel Cake is a cake served on Mothering Sunday or Easter Sunday. This cake is a type of light fruitcake made from flour, butter, sugar, eggs, zest, dried fruits, and a variety of spices. The cake is topped with eleven marzipan balls which represent the true apostles of Jesus, except for Judas. Sometimes Jesus is represented by one ball placed in the center of the cake.
