Shrimp Monterey

  • Shrimp Monterey is a casserole dish made with layers of freshly sauteed shrimp covered with cheese, diced garlic and sprinkled with parsley then placed in the oven until the cheese is melted and stringy.
  • Preparation

    Shrimp Monterey is prepared by sauteing peeled and deveined shrimp in garlic and butter using the same method that you would in preparing shrimp scampi. Once the shrimp has been cooked they are placed in a casserole dish, wine and/or broth is added to the pan juices, and reduced to thicken then poured over the shrimp and covered with a layer of Monterey Jack cheese and parsley and bake uncovered in a 350º oven for 10 minutes or until cheese is melted. It is usually served on pasta or rice.

  • Variations

    Variations of the recipe exist that incorporate the pasta into the casserole. Shrimp Monterey can be used as a topping or filling for Nachos, Quesadillas, or Fajitas.
