Shochu

Once viewed as a drink for alcoholics, shochu has become a fashionable beverage in Japan and the United States. Unlike its cousin, sake, shoju is distilled, and has a high alcohol content. It can be made from black sugar, barley, sweet potatoes or rice. The variety made from sweet potatoes is considered by connoisseurs to be the most elite form of the drink. It is similar to the Korean beverage soju, and like its Korean sibling.
