  • Shawarma is a Middle Eastern sandwich made with a barbecued meat, peppers, onions, pita bread and hummus or another tahini based sauce. Often lamb, goat, beef or chicken is used as the meat for the shawarma.
  • How to Make Shawarma

    1. Cut a pound of beef, chicken or lamb into thin strips and marinate in a mixture of 1 tablespoon lemon juice, 2 tablespoons vinegar, 1 tsp of allspice, 1 tsp of nutmeg, 3 cloves of minced garlic and a pinch of salt and pepper. Allow to marinate in the refrigerator at least a couple of hours.
    2. Prepare a tahini sauce by blending about a cup of tahini, 1/2 a cup of lemon juice, 1 garlic clove, some parsley and a pinch of salt. Add a little water to help the mixture blend well, but don't exceed more than a cup of water. Set aside.
    3. Take out the meat and broil it in the oven or grill it. Serve into a warmed pita with the tahini sauce and a some chopped onions, tomatoes and peppers.
