Several species of fish can be considered sea bass. Most of these fish are found near the United States in both oceans and some larger reef bass are found in the Indian Ocean. The most commonly eaten and desired sea bass is the Patagonian Toothfish, also known as Chilean Sea Bass.
Chilean Sea Bass
Though designated as Chilean, the Patagonia Toothfish is found in the southern Atlantic and Pacific oceans, as well as areas of the Indian Ocean. Due to overfishing, there are several restrictions enforced to dissuade illegal capture and sale of Chilean Sea Bass.
They feed mostly on squid and smaller fish, and thus have a meaty, moist taste.
