  • Sardines, or pilchards as they are also known, are a group of several smaller oily fish. Related to herring, they were named after the island of Sardinia, where they could once be found in abundance.

    Sardines that can be found in grocery stores in the roll-back tin cans may, in some cases, be sprats or round herring. The sizes of the fish found within the cans can vary depending on species. The higher quality cans usually have the heads and gills removed and they may possibly have their insides removed before they are packaged. The sauce they are packaged in varies and is usually oil or some kind of sauce.
