Rum Cake

  • Rum cake is generally a yellow sponge cake made with rum, soaked in rum or topped with a rum sauce or frosting. Rum cake can be easily prepared ahead as a great dessert for your Christmas or Thanksgiving holiday table.

  • How to Make a Simple Rum Cake

    1. Preheat oven to 325 degrees.
    2. Mix the yellow cake mix and instant vanilla pudding mix in a medium bowl.
    3. Mix the eggs, 1/2 cup of the water, vegetable oil and 1/2 cup of the rum in a large bowl.
    4. Add the cake and pudding mixture to the egg and water mixture and mix until well combined.
    5. Grease a bundt pan with the shortening, then flour.
    6. Sprinkle the pecans in the bundt pan, then fill with the batter.
    7. Bake for one hour or until an inserted toothpick comes out clean.
    8. While the cake is baking, combine the remaining 1/4 cup of water, butter and sugar in a small saucepan over high heat.
    9. Bring the mixture to a boil, then reduce heat to medium and simmer until the mixture has reduced to a syrupy consistency.
    10. Remove from heat and stir in the remaining 1/2 cup of rum.
    11. When the cake is done baking, remove from the oven and invert to a serving dish.
    12. Poke small holes in the top of the cake using a toothpick, then pour the syrupy glaze over the cake.
    13. Loosely cover the cake and store at room temperature for one day.
    14. Cut the cake into 10 slices, serve and enjoy! Refrigerate any remaining cake.
