Rum cake is generally a yellow sponge cake made with rum, soaked in rum or topped with a rum sauce or frosting. Rum cake can be easily prepared ahead as a great dessert for your Christmas or Thanksgiving holiday table.

Ingredients
- 1 package yellow cake mix (18.25 ounces)
- 1 package instant vanilla pudding mix (3.5 ounces)
- 4 eggs
- 3/4 cup water
- 1/2 cup vegetable oil
- 1 cup rum
- 1/2 cup pecans, chopped
- 3 tablespoons butter
- 1 cup sugar
- Shortening and additional flour for greasing the pan

How to Make a Simple Rum Cake
- Preheat oven to 325 degrees.
- Mix the yellow cake mix and instant vanilla pudding mix in a medium bowl.
- Mix the eggs, 1/2 cup of the water, vegetable oil and 1/2 cup of the rum in a large bowl.
- Add the cake and pudding mixture to the egg and water mixture and mix until well combined.
- Grease a bundt pan with the shortening, then flour.
- Sprinkle the pecans in the bundt pan, then fill with the batter.
- Bake for one hour or until an inserted toothpick comes out clean.
- While the cake is baking, combine the remaining 1/4 cup of water, butter and sugar in a small saucepan over high heat.
- Bring the mixture to a boil, then reduce heat to medium and simmer until the mixture has reduced to a syrupy consistency.
- Remove from heat and stir in the remaining 1/2 cup of rum.
- When the cake is done baking, remove from the oven and invert to a serving dish.
- Poke small holes in the top of the cake using a toothpick, then pour the syrupy glaze over the cake.
- Loosely cover the cake and store at room temperature for one day.
- Cut the cake into 10 slices, serve and enjoy! Refrigerate any remaining cake.
