Rogan Josh

  • Rogan Josh is a Indian braised lamb dish. It is sometimes made with mutton. It is usually served with rice or roti. While somewhat spicy, it is much milder than its sister dish, gosht vindaloo.
  • History

    Rogan josh came from Persia, and some argue that is where the name comes from, as rogan means "clarified butter" in Persian, and josh means "intense heat". Others say that the red color specific to the Kashmiri version of the dish gave rogan josh its name, as rogan means "red" in Kashmiri and gosht is a term for lamb ("josh" being the Anglicized version of the word).
