Resveratrol

  • Resveratrol is a phytoalexin that occurs in many plants when they're attacked by certain fungi or bacteria. Some similar compounds are being developed by pharmaceutical companies as treatments for diabetes. It's found in higher concentrations in red wine than in most other foods. Research on resveratrol in mice trials is not conclusive, but may indicate anti-aging effects, using a mechanism similar to calorie restriction diets. It has also been suggested that it could be part or all of the mechanism behind the "French Paradox", which is the inexplicably general level of health enjoyed by some Europeans despite a diet that includes a large amount of butter, cheese, and red wine.
