Raisins

Dried grapes, or raisins, are not only a popular high-energy low-fat snack, but also a common addition to many sweet and savory dishes. Used extensively in baked goods, such as cookies, tarts and cakes, raisins are also an ingredient in many Indian entrees.

Common varieties

  1. Dark: Dark purple, nearly black in color, Dark raisins are made from Thompson grapes and are the most common raisin variety in North America.
  2. Sultana: Dried yellow Sultana grapes native to Turkey and Iran produce Sultanas, which are larger, softer and sweeter than Dark raisins.
  3. Muscats: Often called golden raisins, these are made from white Muscat or Thompson grapes which have been oven dried and chemically treated to retain their light color.
