Rainbow Cookies

- Typically tricolor to represent the Italian flag: red, yellow, and green
- Also known as seven layer rainbow cookie, ribbon cookie, Neapolitan cookie, and Italian wedding cookie
- Layers may be filled with jam or preserves

Rainbow Cookies are an Italian cake-like cookie made from colored marzipan cake, layered and separated by raspberry jam, while the outer layers are coated in chocolate.
