    1. Corn tortillas in place of flour
    2. Wheat tortillas also called Mexican cheese sandwiches: The tortilla is covered with brie, sliced pear, then poached in red wine, this dish is called sincronizada in Mexico, and never called a quesadilla.
    3. Grilled or fried

  • Directions

    1. Heat a skillet over medium heat
    2. Add 1/2 teaspoon corn oil
    3. When oil is hot, place 1 tortilla in pan
    4. Sprinkle with grated cheese and filling
    5. Top with second tortilla or fold individually
    6. Cook until cheese is melting and the bottom of tortilla is golden brown
    7. Flip and cook until golden on both sides
    8. Remove from heat
    9. Cut into wedges
    10. Serve with sour cream and guacamole
