A pumpkin roll is a dessert made with pumpkin-flavored cake, usually rolled over a cream cheese or other sweet mixture.
Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin puree
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup flour
- 1 cup powdered sugar
- 8 ounces cream cheese, softened
- 4 tablespoons butter, softened
- 1 teaspoon vanilla extract
How to Make Pumpkin Roll
- Preheat oven to 350 degrees.
- Grease a jelly roll pan or baking sheet, then cover with wax paper. Grease then flour the wax paper.
- Mix the eggs and sugar in a large bowl.
- Mix in pumpkin puree, baking soda, cinnamon, nutmeg and flour until smooth.
- Spread the batter evenly on the wax paper in the baking dish.
- Bake for 15 minutes.
- Lay a clean kitchen towel flat on a counter or other flat surface. Sift or sprinkle 1/2 cup of the powdered sugar on the towel.
- When the baking is complete, invert the cake directly onto the towel.
- Remove the wax paper from the cake and sift or sprinkle the remaining powdered sugar onto the top of the cake.
- Starting from the narrow end, roll the cake and towel together. Allow to cool for 30 minutes.
- Mix the cream cheese, butter and vanilla extract until smooth.
- After the cake has completely cooled, unroll and remove the towel.
- Spread the cream cheese mixture on top of the cake.
- Re-roll the cake with the cream cheese filling inside.
- Wrap in wax paper and refrigerate for one to two hours.
- Remove from the refrigerator, slice and enjoy!
