  • How to Make Pumpkin Roll

    1. Preheat oven to 350 degrees.
    2. Grease a jelly roll pan or baking sheet, then cover with wax paper. Grease then flour the wax paper.
    3. Mix the eggs and sugar in a large bowl.
    4. Mix in pumpkin puree, baking soda, cinnamon, nutmeg and flour until smooth.
    5. Spread the batter evenly on the wax paper in the baking dish.
    6. Bake for 15 minutes.
    7. Lay a clean kitchen towel flat on a counter or other flat surface. Sift or sprinkle 1/2 cup of the powdered sugar on the towel.
    8. When the baking is complete, invert the cake directly onto the towel.
    9. Remove the wax paper from the cake and sift or sprinkle the remaining powdered sugar onto the top of the cake.
    10. Starting from the narrow end, roll the cake and towel together. Allow to cool for 30 minutes.
    11. Mix the cream cheese, butter and vanilla extract until smooth.
    12. After the cake has completely cooled, unroll and remove the towel.
    13. Spread the cream cheese mixture on top of the cake.
    14. Re-roll the cake with the cream cheese filling inside.
    15. Wrap in wax paper and refrigerate for one to two hours.
    16. Remove from the refrigerator, slice and enjoy!
