Ingredients
- 4 eggs
- 1 cup vegetable oil
- 2 cups pumpkin, fresh or canned puree
- 2 cups sugar
- 2 cups flour, cake or all-purpose
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- 1/4 teaspoon allspice
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- Powdered sugar, optional
How to Make Pumpkin Muffins
- Preheat oven to 350 degrees.
- Grease and flour cupcake pans or line with paper liners.
- Beat eggs in a large bowl.
- Mix in vegetable oil and pumpkin puree.
- Sift together the sugar, flour, cinnamon, nutmeg, ginger, cloves, allspice, baking soda and salt.
- Add the dry mixture to the pumpkin mixture slowly while stirring.
- Pour the batter into the greased or lined cupcake pans, filling each half full.
- Bake for 20-25 minutes or until a toothpick inserted into the center of each muffin comes out clean.
- Transfer to a cooling rack and let cool.
