You can't do a lot up north of the city until after you defeat the Gym leader here, as Galactic grunts will block your path. Instead, shop through the Department Store to find some good items.
Head to the house to the right above the PC and talk to the man inside, select the top option, and he'll give you a Porygon. If you collected the Upgrade earlier, you can evolve it to Porygon2 via trading - Porygon2 is a strong Pokemon that can learn a variety of moves.
You can get your Pokemon massaged in the southwest of town in the house on the left for free, which is good for Buneary and Eevee since they evolve based on Happiness. You also get items for contests whenever you do it - the items are random, and you get only one per day.
To the right of the grooming lady is a house where you can talk to a clown and choose the correct hand to get the Coin Case - it's random which hand it's in, so just keep trying until you get it. The Coin Case lets you play the slots up north after the grunts clear out.
When you're prepared, head to the lower left of Veilstone to find the Gym - Dawn and Crasher Wake appear to talk to you for a bit. When that's finished, head inside.
Veilstone Gym
This Gym is set up as a puzzle maze - if you push a punching bag in the direction of the pole it's hanging on, it will move that way, and smash any tires it touches along the way. There are three trainers here, so it shouldn't be too difficult to do.
To get through the Gym, hit the first bag you see on the right, then head up and hit the next bag up, and then up again until it stops near some holes.
Now, hit the other bag up to smash the tires and then go up and around the bag you just hit to find another bag. Hit it twice to the left to smash two tires, then go left and then down and fight the trainer there. If he blocks your path, head around to the lower part of the area to keep moving.
Head to the upper left corner of the Gym and fight the trainer there, then hit the bag down and then right. Head down to the lower left corner to find two bags - hit the one you can reach up, then left, and then down to smash the tires.
Once the tires are smashed, hit the next bag up, then right. Head through the place where the tires were, and then push the upper bag right to smash the tires blocking the path to Maylene.
NOTE: The tires will respawn if you exit and re-enter the Gym, so if you leave to rest your Pokemon at the PC, you'll need to complete this puzzle again.
When you're ready, talk to Maylene to begin a battle.
BOSS FIGHT: Maylene
Maylene uses a level 28 Meditite, a level 29 Machoke, and a level 32 Lucario. If you have a high level Pokemon with Flying attacks, you have Meditite and Machoke covered - for Lucario, Fire attacks are great.
If you have a Staravia, use it against the Meditite and use Flying attacks to defeat it. When Machoke comes out, you can use a Kadabra if you have it or just keep Staravia out. Once Machoke is finished, Maylene will call out Lucario.
Lucario is a Fighting/Steel dual type, so it's difficult for Psychic and Flying attacks to make much of a dent. It also has Drain Punch, which can kill most anything in one or two hits while healing Lucario's HP. The best tactic if you chose Chimchar as your starter is to have a high level Monferno use Fire attacks against it. Be sure to equip an HP restoring berry to Monferno before the fight - using a Potion during battle against Lucario won't be worth much if it starts spamming Drain Punch.
Recommended levels for making this fight easier on yourself is to have your party at level 40 or higher. When you defeat Maylene, you'll receive the Cobble Badge and TM60(Drain Punch). To leave the Gym, head to the right and hit the bag down to smash through the last set of tires.
After you exit the Gym, Dawn will appear and tell you that Team Galactic stole her Pokedex, and that she needs your help to get it back. Heal at the PC, then head north on the left path to start a 2 vs. 2 battle against some grunts.
BOSS FIGHT: Team Galactic Grunts
The first grunt uses a level 24 Zubat and a level 26 Crogunk, while the second one uses a level 24 Zubat and a level 26 Stunky.
Dawn will use a Clefairy, which is pretty useless except for its Sing attack. Use Psychic or Electric attacks against the Zubats to clear them out.
Crogunk is weak against Flying and Psychic attacks, and Stunky is weak against Fighting and Ground attacks. A Porygon that knows Psybeam and a Graveler with Magnitude will work wonders in this battle.
Once you defeat the grunts, Dawn will get her Pokedex back, and Looker will appear to talk to you for a bit and show you where the Galactic Warehouse is. He'll also point out the HM02(Fly), which you can teach to a Flying type Pokemon to travel quickly to places you've already been to.
When you're finished in Veilstone, head south to reach Route 214.
Route 214

Zubat
Geodude
Graveler
Houndour
Rhyhorn
Fishing/Surfing Pokemon Encountered:

Golduck - Surf
Goldeen - Good Rod
Magikarp - Good Rod
Gyarados - Super Rod
Seaking - Super Rod
National Dex Pokemon Encountered:
Spoink - Swarm
Poocheyena - Radar
Vulpix - LeafGreen
Route 214 is a bit different here from Diamond/Pearl - there's several trainers here with rare Pokemon that you might not see elsewhere. Use Rock Smash on the left to find the Magmitizer, which evolves Magmar into Magmotar after you trade it, and you'll find the Razor Fang hidden in a patch of grass that you can only get to with Rock Smash - just press A near the area that doesn't have grass.
Catch a Houndour if you get the chance - it evolves into Houndoom early and works as a substitute Fire type if you didn't choose Chimchar as your starter. Rhyhorn has a new evolution that you can get via trading called Rhyperior that is worth the training as well.
Use this route to grind for levels for a bit, and use the VS Seeker on the trainers here to continuously get some substantial EXP. When you're finished, head south to the Hotel Grand Lake resort.
Hotel Grand Lake Resort
You can get the key to the woman's room by going to the upper left corner of the main office, face north, and press A. Give it back to the woman waiting outside of her room, then enter the room and talk to her to obtain the White Flute, which increases the chance of finding wild Pokemon.
Head to the room left of the lobby to find three people. Talk to the clown to receive TM92(Trick Room), which makes the slowest Pokemon go first for 5 turns, so it's good for powerful but slow Pokemon in your party.
Head to the restaurant and fight the trainers there - there are new ones every day, so it's a decent place to build some EXP. When you're finished, head through the main office and exit to Route 213.
Route 213

Magikarp - Good Rod
Gyarados - Super Rod
Octillery - Super Rod
National Dex Pokemon Encountered:
Swellow - Radar
Fight the trainers scattered about, and check out the hut near the beach.
Inside the hut is a man named Dr. Footstep - if the Pokemon at the front of your party is happy with you, talking to Dr. Footstep will get you a Ribbon for that Pokemon, which is useful later on in the game.
When you finish here, head west to enter Pastoria City.
Pastoria City
You'll be able to play the safari-style game Great Marsh here, as well as find the Move Tutor, who can teach your Pokemon any move it can learn as long as it's at a high enough level to learn it. This is great for those times when you forget a move only to learn something that you discover is useless - however, you'll need a Heart Scale found in the Underground, or wild Luvdisc, which you won't get until later.
Head to the house on the easternmost side, near the gate to Route 213, to talk to a man who'll give you certain scarfs for having your Pokemon's contest stats maxed in a certain area. You haven't done that yet, so just remember where he is for now.
Be sure to stop by the Pokemart and stock up on items you might need - you'll be facing your rival soon, so grab some Potions if you need them.

If you want to play Great Marsh, the basics are easy - you get 30 balls for 500p, and approximately 500 steps to find some rare Pokemon that con only be found in the marsh, like Croagunk. Talk to the man at the beginning of the Great Marsh to receive a Yellow Shard to spend on at the Move Tutor's.
There's a berry lady in the house near the entrance to Route 212 - talk to her to receive one random berry each day. When you're ready, head to the Gym - before you get to go in, your rival will appear and challenge you to a battle.
BOSS FIGHT: Rival
Your rival uses certain Pokemon depending on what you chose as your starter:
It's recommended to be at least level 40 with your party Pokemon before taking him on. His party is higher in level than the last time you fought him, but you can just use the same tactics against him as last time to mop the floor with him.
Be sure to have some Potions, Super Potions, or Hyper Potions handy in case he gets a few critical hits in - they work wonders for you when your Pokemon get them, but they are a double-edged sword when battling your rival.
When you defeat him, he'll leave - head to the PC and heal before you enter the Gym.
Pastoria Gym
This Gym is also set up as a puzzle - this time, you'll need to press certain buttons to raise and lower the water level. To get to the Gym leader, this is the solution:
Head forward and down the left path, hit the yellow button, and drain the water. Head down the steps on the right and down the path until you're on the platform near the Gym leader with a fisherman, and press the green button.
Ignore the yellow button adn head down the right path until you reach a platform with a sailor and a blue button. Press it, then head down the path and hit the green button. Go right, and press the yellow button to drain the water.
Head to the northwest of the Gym and press the blue button on the platform with the sailor. Now, head right and ignore the green button to reach the Gym leader.
It's recommended to take out the trainers in here first, then head to the PC and heal, come back, and solve the puzzle. When you're ready, talk to the Gym leader to start a battle.
BOSS FIGHT: Crasher Wake
Wake uses a level 33 Gyarados, a level 34 Quagsire, and a level 37 Floatzel.
Gyarados uses Waterfull and Bite, both of which hurt and can make your Pokemon flinch. Be careful after you take Gyarados down past 1/2 its HP, as Brine will become stronger - if you have a high level Electric type Pokemon, use Electric attacks against it quickly to end the fight sooner.
Quagsire doesn't take any damage from Electric attacks due to it being a Ground type, but it takes heavy damage from Grass attacks due to it being a dual Ground/Water type. Use any of your high level Grass type Pokemon on it to take it out quickly.
Floatzel likes to use Ice Fang, which hurts Flying type Pokemon and has a chance to freeze them. It also uses Crunch, which can kill most Psychic type Pokemon in a single hit with a chance of lowering your Defense. Don't bother using a Fire type - Aqua Jet allows Floatzel to attack first.
To defeat Floatzel, use an Electric type Pokemon and spam Electric attacks, using Potions to replenish your HP as necessary. It's recommended to have all your party Pokemon level 40 or higher to make the fight easier.
When you defeat Wake, you'll receive the Fen Badge, which makes any Pokemon up to level 50 obey you and lets you use Surf outside of battle. You'll also obtain TM55(Brine), which gets stronger after the Pokemon loses 1/2 its HP.
When you leave the Gym, your rival appears to chat with you a bit, then Wake exits the Gym and they both leave. Head north to talk to Crasher Wake and a cutscene will play of a Galactic grunt running off to the east. Head right and talk to the grunt and he'll exit to Route 213.
Route 213 II
After you head through the gatehouse, you'll see the grunt again. Talk to him and he'll run away.
Follow him by heading towards the beach and talk to him again - he'll run off, and Looker will show up. Talk to Looker, and he'll enter the Grand Lake Hotel resort.
Enter the resort, and move through the office to run into the grunt again. Talk to him, and he'll run away again. Head up a bit and you'll encounter him one final time.
BOSS FIGHT: Galactic Grunt
This grunt uses a level 31 Croagunk.
Croagunk is a Poison/Fighting dual type, so use Psychic attacks against it to end the battle quickly.
You can use Porygon, Kadabra/Alakazam, or Psyduck/Golduck, depending on which you have leveled the highest. Use Psybeam with a level 40+ of any of these Pokemon and you should be able to take him down in one or two hits.
If you don't have any Psychic types in your party, you can also use Ground and Flying attacks to deal decent damage.
After you defeat the grunt, he'll run away for the last time and Cynthia will appear and chat with you. After that, your rival appears and talks to you and Cynthia, and you'll obtain the Secret Potion to use on the Psyducks on Route 210 to move them.
Head north to reach Veilstone City, stop by the PC and heal your party, then head left to reach Route 215. From there, keep moving until you reach Route 210 again, and use the Secret Potion by pressing A while standing near the Psyducks.
After you do that, Cynthia appears and gives you the Old Charm. Head up to Route 210 North.
