Pie fillings are generally baked as well. However, some fillings never require baking, such as those made with a mixture of cream cheese and whipped topping.

With the convenience of grocery store products, such as instant puddings, canned pie fillings and ready to serve pie shells, pies can be thrown together with little effort and no baking whatsoever. Then there are small, individual pies that are fried in shortening, lard or cooking oil.

• Fruit Pies are filled with fresh or canned fruit that is sliced, diced and sometimes whole. These pastries can be baked or fried and topped with an upper crust, whipped topping or glaze. On occasion, fruit pies contain fresh, uncooked fruit prepared in a baked or graham crust.

• Chiffon Pies are made from beaten egg whites or whipped cream. Then folded into a gelatin mixture, giving them their light and fluffy texture.

• Ice Cream Pies are an ice-cream mixture placed into a prepare crust, usually a cookie crumb. It can be garnished with candy, cookies and toppings, and it is store and served frozen.

• Syrup Based Pies, like pecan, usually have a corn syrup or molasses mixture baked into the pie shell.

• Meat pies are usually a one dish meal containing meat, potatoes and vegetables cooked in a pastry shell. Many are topped with upper crust or mashed potatoes.
