Pasta Fagioli is an Italian dish consisting of a combination of Cannellinis or borlotti beans, pasta, tomatoes and seasonging. Pasta Fagioli varies in consistency from a soup to a thick stew.
Recipe
Directions
- In a frying pan saute garlic in 3 tablespoons of olive.
- Add the tomatoes, broth and wine and simmer for 45 minutes.
- Add basil, and thyme and oregano.
- It the broth is to thick add more chicken broth or water.
- Add beans and pasta
- Bring to a boil
- Reduce heat and cook another 15 minutes.
- Cover and remove from heat.
- Let rest for 10 minutes.
- Top with grated Parmesan cheese.
- Serve with garlic bread and a tossed green salad.
