    • During Passover, the traditional grains, wheat, barley, spelt, rye, and oats, that were used to make bread in ancient Israel are prohibited from being consumed. Due to the rapidness of the Jews' flight from Egypt, they did not have time to wait for their bread to rise. To avoid even the potential for leavening, only grains that were baked into bread within 18 minutes of coming into contact with liquid are permitted. This is the exception that allows matzoh that has been certified as Kosher to be consumed.
