Mushroom Soup

Mushroom Soup can be made a variety of different ways and with a variety of different types of mushrooms such as shiitake, morel, chanterelle, blewit, ink cap, maitake, crimini and portobello.

Directions

  1. In a medium sized saucepan heat oil over medium high heat.
  2. Add mushrooms, onion, garlic, and oregano, cook until tender and liquid is evaporated.
  3. Add tomatoes, broth, and lemon peel bring to a boil.
  4. Reduce heat to low.
  5. Cover and simmer for 5-10 minutes.
  6. Garnish with Parmesan cheese.
