Mushroom Soup can be made a variety of different ways and with a variety of different types of mushrooms such as shiitake, morel, chanterelle, blewit, ink cap, maitake, crimini and portobello.
Recipe
- 1 teaspoon of olive oil
- 1- 8 once package of fresh mushrooms of choice (chopped)
- 1/2 cup onion] (chopped)
- 2 medium cloves of garlic (diced)
- 1 teaspoon of dried oregano
- 1- 16 once can of tomatoes (chopped)
- 2- 14 and 1/2 once cans of chicken broth
- 1/4 teaspoon grated lemon peel
- Garnish with grated Parmesan cheese
Directions
- In a medium sized saucepan heat oil over medium high heat.
- Add mushrooms, onion, garlic, and oregano, cook until tender and liquid is evaporated.
- Add tomatoes, broth, and lemon peel bring to a boil.
- Reduce heat to low.
- Cover and simmer for 5-10 minutes.
- Garnish with Parmesan cheese.
