• Recipe

  • 1 teaspoon of olive oil
  • 1- 8 once package of fresh mushrooms of choice (chopped)
  • 1/2 cup onion] (chopped)
  • 2 medium cloves of garlic (diced)
  • 1 teaspoon of dried oregano
  • 1- 16 once can of tomatoes (chopped)
  • 2- 14 and 1/2 once cans of chicken broth
  • 1/4 teaspoon grated lemon peel
  • Garnish with grated Parmesan cheese

• Directions

  1. In a medium sized saucepan heat oil over medium high heat.
  2. Add mushrooms, onion, garlic, and oregano, cook until tender and liquid is evaporated.
  3. Add tomatoes, broth, and lemon peel bring to a boil.
  4. Reduce heat to low.
  5. Cover and simmer for 5-10 minutes.
  6. Garnish with Parmesan cheese.
