Muffins

While muffins may look like cupcakes, the two have distinct textures and flavors. Muffins can have a cake-like or bread-like texture. A muffin is a type of quick bread.

History

The word muffin was first used in 11th century Britain, and were often a breakfast food. As the leavening agents used today did not exist at that time, they were undoubtedly very different. Modern home-baked muffins go stale quickly; the invention of preservatives allowed the muffin to become a mass-market baked good. It became popularized as a healthy alternative to doughnuts, but as muffins increased in size and sweetness, their healthy reputation declined.
