History
The word muffin was first used in 11th century Britain, and were often a breakfast food. As the leavening agents used today did not exist at that time, they were undoubtedly very different. Modern home-baked muffins go stale quickly; the invention of preservatives allowed the muffin to become a mass-market baked good. It became popularized as a healthy alternative to doughnuts, but as muffins increased in size and sweetness, their healthy reputation declined. -
