Monterey Jack cheese is an American semi-hard cheese. It is mild in flavor and used in sandwiches, salads, and Mexican dishes such as quesadillas or nachos.
History
Monterey jack was made in the 1800s by Franciscan monks, but was eventually marketed by a businessman and dairy owner named David Jack. The cheese then became known as "Jack's Cheese" or "Monterey Jack".
