Miso

Miso is a paste made from fermented soybeans, grains and salt. The paste can be used as a basis for soups, sauces and salad dressings. While the origins of fermented soybean paste can be traced back to China, today is is recognized as an ingredient popular in Japanese cooking. Miso paste is also a popular ingredient in vegan and vegetarian cooking, as it can be used to build a flavor profile where animal or fish stock might otherwise by used.
