  • How to Make Mint Jelly

    1. Place the mint leaves in the bottom of a large saucepan.
    2. Smash the leaves using a potato masher.
    3. Add water and bring the mixture to a boil over medium heat.
    4. Remove the pan from the heat, cover and let stand for 10 minutes.
    5. Strain the mixture and place the mint in a separate saucepan.
    6. Add the lemon juice, food coloring and sugar and bring to a boil, stirring constantly.
    7. Stir in the liquid pectin. Continue to boil and stir for one minute.
    8. Remove the mixture from heat and pour jelly into clean jars. Skim off any foam and seal the jars using a water bath.
