How to Make Mint Jelly
- Place the mint leaves in the bottom of a large saucepan.
- Smash the leaves using a potato masher.
- Add water and bring the mixture to a boil over medium heat.
- Remove the pan from the heat, cover and let stand for 10 minutes.
- Strain the mixture and place the mint in a separate saucepan.
- Add the lemon juice, food coloring and sugar and bring to a boil, stirring constantly.
- Stir in the liquid pectin. Continue to boil and stir for one minute.
- Remove the mixture from heat and pour jelly into clean jars. Skim off any foam and seal the jars using a water bath.
