Jean-Gilles began his career playing college football with the Georgia Bulldogs. He made his college debut in 2003 and went on to help the school set a record with 44 wins over three seasons. Following college, Jean-Gilles was selected 99th overall in the 2006 NFL draft by the Philadelphia Eagles.
