  • French Variation

    In the French variation egg yolk is added to the mashed potatoes, then piped through a pastry tube in a wavy ribbon design, brushed with butter and placed in the oven until browned. This dish is called Pommes duchesse.

  • Special Care

    Always warm the milk before adding to the mashed potatoes. Adding cold milk will make the starch in the potatoes set, causing a tacky texture.

    Mashed potatoes are often and ingredient in other dishes such as shepherd's pie, pinogies, colcannon, potato croquettes and other various casserole dishes.
