Malt Vinegar

Malt vinegar is the liquid result of fermenting malted barley ale. Used in pickling, sauces and marinades, it is a popular condiment for fish and chips because of its similarity to lemons in flavor.

Weird Science

During the fermentation process, vinegar produces a harmless bacteria which turns the alcohol into acetic acid. This bacteria is called mother of vinegar.

Some vinegars will develop vinegar eels, which are a kind of microscopic worm that feeds on the mother of vinegar. Vinegar eels are also harmless, but most manufacturers filter them out before bottling.
