Madeleines

Originally from Commercy, France, madeleines are a small cakes shaped like seashells. They are made from flour, eggs, sugar, butter and vanilla. Many madeleines are also flavored with lemon.

How to Make Madeleines

  1. Preheat oven to 375 degrees.
  2. Combine the eggs, sugar and brown sugar using an electric mixer.
  3. Mix in the vanilla extract, lemon peel and salt.
  4. Gradually mix in the flour.
  5. Continue to mix while drizzling in the melted butter.
  6. Grease and flour the madeleine pan.
  7. Fill each pan indentation with one tablespoon of the batter.
  8. Bake for 12-15 minutes or until golden brown.
  9. Remove from pan and place on a cooling rack. Sift or sprinkle cookies with the powdered sugar.
