  • A salmon fillet that has been cured is called lox. Lox is brined in a process which uses oil or water, sugars, salt and other spices. The finished product is basically still raw and can be cut into very thin slices. Lox is a common food in Jewish culture. It can be incorporated into many dishes and is known to be served on a bagel with cream cheese and capers.
