Ingredients
- 3/4 cup butter, softened
- 1 3/4 cups flour
- 1/2 cup powdered sugar
- 2 lemons, washed
- 4 eggs
- 1 1/2 cups sugar
How to Make Lemon Bars
- Preheat oven to 350 degrees.
- Mix the butter, 1 1/2 cups of the flour and the powdered sugar in a large bowl.
- Press the mixture into the bottom of an ungreased 13" x 9" baking pan.
- Bake for 20 minutes.
- Using the smaller holes on a grater, grate the lemon rinds until two tablespoons of zest is produced.
- Slice the lemons in half and squeeze the halves to produce 1/3 cup lemon juice.
- Mix the eggs and sugar in a large bowl.
- Mix in lemon zest and lemon juice until well combined.
- Spread the lemon filling over the baked crust. Bake for 20 to 25 minutes, or until the filling is solid.
- Sift or sprinkle additional powdered sugar over the filling, if desired.
- Allow to cool completely. Cut into 24 squares, serve and enjoy!
