Late harvest wines are made from grapes that have been left on the vine longer than traditional wine. The wine created using this grapes is typically very sweet due to the water loss in the grape. Some late harvest grapes are left to freeze, resulting in ice wine.
The Process
Grapes left on the vine develop botrytis cinerea, a wanted mold developes on the fruit. After time, the fruit loses water and the mold changes the acidity of the grape. Each grape is hand-picked when it has fully rotted, then made into wine.
