• Irish stew is a traditionally slow cooked Irish dish, consisting of lamb or beef, potatoes, carrots and onions. The meat is browned before the vegetables and liquid are added. The mixture is simmered over low heat until meat becomes tender. The potatoes are usually added toward the end of the cooking time.
