Icing is used to decorate the tops of cakes and cookies. When using a pastry bag icing can take the form or flowers and leaves and many other ornate designs and writings. Icing is usually made with sugar mixed with a combination of butter or shortening, milk, food coloring and flavor extracts.
Types
- Ganache: Thin coating of Milk, Dark, or White Chocolate poured over a cake.
- Buttercream: Rich mixture of shortening (usually not butter) and sugar, whippped and spread over a cake.
- Fondant: Thick sugar paste, rolled out and placed over the cake.
